Pascal Agrapart has farmed this way in Avize since 1984, well ahead of the grower Champagne boom; the estate dates to 1894, has passed through four generations, and remains tiny. The 7 Crus is a snapshot of seven parcels in seven villages, about 70% of it Grand Cru fruit from Avize, Oger, Cramant and Oiry with Premier Cru parcels filling out the rest, mostly
